granny smith apples ( cored and sliced) 8
small whole-wheat tortillas 1 1⁄2 cups
grated cheddar ((smoked cheddar would be delicious)) 2 cups
baby spinachInstructions
- Sprinkle 1 tortilla with cheese, spinach and apples. Press another tortilla on top to make a quesadilla.
- Heat a non-stick skillet over medium-high heat and spray with cooking spray (or add a little bit of oil).
- Cook the quesadilla for 2 - 3 minutes a side. Repeat with remaining tortillas. Serve warm with yogurt dip or hummus.
