Cheddar Chive Crackers

Description

Ingredients

6 ounces
sharp cheddar (grated)
3⁄4 cups
all purpose flour
1⁄8 teaspoons
cayenne pepper
1⁄4 teaspoons
mustard powder
1 cup
rice cereal
1 bunch
chives (chopped)
4 tablespoons
butter (softened and cut into pieces)
2 tablespoons
water (plus more if needed)

Instructions

  1. Whisk the flour, cheese and mustard and cayenne together.
  2. Using a pastry mixer, or two knives, mix the butter in until the dough resembles peas.
  3. Add the rice cereal and chives. Add the water 1 tbsp at a time and knead until a dough forms.
  4. Roll out the dough on a lightly floured surface into a log and refrigerate to set it and rest the glutens.
  5. Slice ¼ inch thick rounds and place on a baking sheet lined with parchment paper.
  6. Bake at 375 degrees for 8 – 10 minutes, until slightly golden brown, flip them over and bake another 3 – 4 minutes
