Date and Sunflower Seed Power Balls


Description

These snacks are packed with protein and fibre to keep you going at school or at work.

Ingredients

1 1⁄2 cups
dates (pitted and chopped)
1 cup
sunflower seed butter
1⁄2 teaspoons
pure vanilla extract
1 cup
large flake oats
1⁄4 cups
pumpkin seeds (chopped)
1⁄4 cups
dried cranberries

Instructions

Soak the dates in hot water for 5 minutes to soften them.  Drain.

Place the dates, sunflower seed butter and vanilla in a food processor.  Pulse on and off until smooth.  Transfer to a bowl.

Stir in the remaining ingredients.  Roll into 32 1-inch balls.  You can then roll them in cocoa powder or toasted coconut to give an appetizing garnish!

Notes

To toast oats or coconut, spread out evenly on a rimmed baking sheet and bake at 400 F for 5 - 6 minutes, until lightly golden brown.  Don't wander off too far, they can burn quickly.  Store in an airtight container for up to one week.
