Yogurt parfait with frozen berries

Description

Pack this delectible yogurt in cold thermoses for school lunches.  Frozen berries will thaw by lunch time, while the yogurt will take on a frozen dessert texture.  Boost the protein by using strained or Greek yogurt.

Ingredients

2 cups
plain greek yogurt
1 tablespoon
honey
1 teaspoon
vanilla extract
1 teaspoon
ground cinnamon
1⁄2 tablespoons
fresh mint leaves, (chopped)
2 cups
frozen berries or frozen, sliced fruit

Instructions

Stir the yogurt, honey, vanilla, cinnamon and mint together in a bowl.

Add to a cold thermos, and top with frozen berries or frozen sliced fruit.

This would also make a delicious dip for fruit kebobs, or grilled peaches and pineapples.

Notes

We created this yogurt dip during our Healthy Kids Community Challenge day camps, and during our video series with Michelle Ferreri.
